Tuesday's Tip: Using Whole Chickens

One of my favorite ways to use whole chickens is by throwing 3 into a big electric roaster and cooking until the meat falls off the bone. Then I remove all the meat and bag it in portion sizes to freeze and use for soups, curries, and numerous other meals that require cooked chicken meat. With the remaining bones & skin (and organs if I saved them) I add water and let simmer for the remaining 24 hours to make broth which I freeze for later use as well.
